  • Oil (for frying)
  • Salt & pepper (to taste)
  • 1/2 tsp paprika (optional)
  • Tennessee Original BBQ, Classic or other sauce you like
Instructions

1. PREPARE POTATOES
Wash and cut potatoes in half lengthwise, then into flat slices (about 5–7 mm thick) to form a scoop shape. Soak in ice water for 30–40 minutes to remove starch, then pat completely dry with paper towels.

2. FIRST FRY
Heat oil to 170–180°C. Fry potatoes in batches for 5–6 minutes until soft but not browned. Remove with a slotted spoon and let them rest on paper towels.

3. SECOND FRY
Increase oil temperature to 190°C. Fry again for 2–3 minutes until golden and crispy.

4. SEASON and SERVE
Drain excess oil on a paper towel. Season immediately with salt, pepper, and paprika. Serve hot with Tennessee Original BBQ, Classic or other sauce you like.
